I didn't want to eat sad diet food while everyone else was enjoying real takeout. I just wanted to lose a few pounds without feeling like I was being punished for it. So I started asking a different question: not "how do I give up the foods I love?" but "how do I make them work for me?"This pizza is what came out of that. 47g of protein, 9g of net carbs, ready in 25 minutes. I serve it to the whole family. No separate meal for me, no eye rolls from the picky ones, and no feeling like I'm missing out.It shouldn't taste this good. But it does.
Ingredients
✓ 2 large eggs + ½ cup liquid egg whites✓ ½ cup shredded light mozzarella✓ ¼ cup grated Parmesan cheese✓ ⅓ cup low-sugar pizza sauce✓ Pepperoni slices (or your favorite toppings)✓ Dried oregano or Italian seasoning✓ Nonstick cooking spray
Instructions
1. Preheat your oven to 400°F (200°C).2. Line a baking tray or pizza pan with parchment paper and lightly coat it with nonstick cooking spray.3. In a bowl, whisk together the eggs, egg whites, mozzarella, Parmesan, and Italian seasoning until smooth and well combined.4. Pour the mixture onto the prepared tray and spread it into a thin, even circle or rectangle.5. Bake for 12-15 minutes, or until the crust is firm and lightly golden.6. Remove from the oven. Spread the pizza sauce evenly over the crust, then top with the pepperoni and any additional toppings you like.7. Bake for another 5-7 minutes, until the cheese is melted and the toppings are hot.8. Let cool for 2-3 minutes before slicing. As it cools, the crust firms up, making it easy to pick up and eat just like a traditional pizza.
